Weber Chicken with Vegetable Noosh-noosh

Ingredients:

  • Whole chicken
  • 1 large onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • A cup of whole baby tomatoes
  • Garlic
  • Olive oil
  • Few sprigs of rosemary
  • Salt and pepper to taste

Instructions:

  1. Light your coals and set up your weber for cookin'!
  2. Cut up the rosemary as fine as you can, and combine it with some salt and pepper.
  3. Oil up your chicken and rub the rosemary seasoning all around.
  4. Prepare your noosh-noosh by quartering the onion, rough chopping the bell peppers, and combining with the garlic and tomatoes.
  5. Salt, pepper, and oil the noosh-noosh.
  6. Spread the coals once they are ready, and get the weber up to 180 degrees.
  7. Add the chicken to a roasting stand, and put the noosh-noosh in a tray and place it underneath the chicken.
  8. Close weber and roast for an hour.
  9. Remove chicken and noosh-noosh from the weber, let the chicken rest for at least 10 minutes before carving and serving.
