Warm and hearty way to make use of leftover chicken (maybe after the weber chicken with ganoush). Make sure you dont throw out the bones, keep them in and blend them for extra calcium!
Ingredients
- 5 cups chicken stock (from The Stock Market)
- 4 medium carrots
- 1/2 medium onion
- 1 leek
- 3 sticks celery
- Bay leaf
- Mixed herbs
- Parsley
- 4 garlic cloves
- Left over chicken, shredded (including small splintering bones)
Method
- Saute the veggies and garlic in olive oil and add salt and pepper,
- Add broth and herbs, simmer until veggies are cooked through.
- Add the cooked shredded chicken and bone mixture to warm through and serve.
